I was perusing Pinterest a few days ago, and came across a chicken dish that looked to be sent straight from Heaven to my doorstep–er, iPad. It’s quite rare for me to have that kind of reaction to a baked chicken dish. I like chicken, and cook it often, but I’m rarely excited by the idea of it.
And then came this glorious Spinach-Artichoke Chicken.
It’s basically spinach & artichoke dip dumped on top of chicken, thereby increasing the chicken’s value ten-fold.
It’s moderately healthy, using Greek yogurt in place of cream cheese and some of the mayo in a standard spinach & artichoke dip (don’t worry about the overflowing 1/2 cup of mozzarella cheese…), but you’d never know it. And best of all, it takes about 40 minutes from start to finish, with minimal “active time”–doesn’t get much easier than that for something at this level of deliciousness.
